Hello Ray and all,

Skimming through September press-cuttings, my attention was drawn by a news item that said: "The Honduras would throw in garbage two million 18-kg boxes of bananas that it could not sell in global markets...There is a world surplus in banana exports of 70 million boxes because of high production in Ecuador."

In India we fry banana chips in cooking oil just like potato chips. They are low on starch and taste as delicious if not more. Perhaps the Honduras and Ecuador could benefit by producing banana chips in bulk with machinery similar to that used for potato chips, vacuum-packing, building brands like Frito Lay and marketing the value-added product in the vast health-conscious US market next door.
